Every year when autumn roles around, winter squash makes its appearance at local markets and
in seasonal dishes. Pennsylvania produces acorn squash, butternut squash, Pennsylvania Dutch, and many other varieties of winter squash.

Squash was a staple Pennsylvania crop even before Europeans arrived. In the eleventh century, Native Americans planted squash as part of the Three Sisters companion crops.
