Turkeys can be members of a special variety of livestock known as "heritage breed." These turkey breeds are not commonly found in supermarkets or on our Thanksgiving tables. Today, heritage breeds are making a comeback, as farmers recognize the importance of preserving agricultural variety and biodiversity.
